Okay but why? The way saber fights are described in books makes it clear that they always try to strike their opponent, block an attack, or deflect an attack, none of which we see in the movies. And in the books you're aware of the force element of combat.

The point is that the choreography is bad. When you go for all style, no substance, you get the problem you see a lot in Star Wars in general (particularly with Disney era Star Wars) where you're asking "why don't they just do X?".
If you're trying to make a visually interesting fight, usually realism stretched to have more, longer intense moments then a real fight would looks vastly more interesting then two people intentionally missing each other does.
I mean take a look at this and remember why realism as the starting point looks more interesting.
