Because Nacho was ordered to burn down the restaurant. Therefore they needed to burn it down in order to fulfil his 'goal' set by the cartel. We know that Nacho is a 'double agent' because Gus has threatened to kill his dad. As for why the chicken bomb, it was done in order to delay the explosion so they could get out of the building.

It is well written dialogue because, surprise surprise, people aren't fucking capeshit villains who go off on perfectly ad lib'd rants that totally own the listener.

Additionally, it's part of dramatic irony which is - we the viewer - know where this ends. But Jimmy does not. So we know his rant is foolish.
