I don't think based Lalo was ever planning to post bail and skip town. He's going to sit around and wait for the DA to find out who the private investigator that coached the witness is. He probably already suspects it's Mike. Once he confirms his suspicions that Gus is moving against him.. then he'll break out of prison during trial anyway. He's playing everyone like a fiddle: Saul, Mike, Gus, Nacho, the judicial process. That's why he didn't give a shit about pretending to act worried or humble in court.

A few episodes ago it was established that Gus is a perfectionist when it comes to running his business. So when he noticed that his employees had done an especially poor job cleaning up that night, he brought Nacho with him to finish the job. But Nacho betrayed Gus and started trashing the place, revealing to the audience that he had been working for Lalo the whole time (triple agent).
Gus wanted to start cooking the chicken early while he was there, but unbeknownst to him Nacho had broken a gas pipe, causing the explosion.

Why did they smash the whole restaurant? I mean the whole place is going to burn up so what's the fucking point? And why would a chicken in a frier cause fire?

He left a gas valve open. If it's airborne in the store, a single spark will light it up. This is why when you're cooking with a gas stove and the burner doesn't start immediately, you turn it off and let it dissipate before trying again.
