The ending was really disappointing. Was expecting a Snowpiercer-like conclusion, or at least some kind of revelation. But there was nothing :/
That's what all modern "auteurs" do. Come up with a semi-interesting premise, don't write an ending, then just "let the viewer decide".
there's nothing auteur about this film, it has no style, it's an insult to cinematic language actually. The film is expositional dump with obvious metaphor that gets repeated over and over again.

She probably got super lucky and ended up on one of the top 5 floors back to back to back. The mom who rode the lift down was searching for her for months. I don't think she ever rode the lift back up. When Goreng decided to travel down with the black dude, they did it fairly early into the month meaning the girl who got stuck on lvl 333 only had to endure 3 or 4 days of no food.

My understanding is that they admit new people every month, so it would be replenished after you kill everyone.

I don't think you'd make it user. Ceiling looks 30ft high and the floor thickness is at least 6ft so you'd need to jump or something and hope you'd be able to grab the ledge. You'd only have one attempt.
Why wouldn't everyone below 130 ride it down and just go up?
i'm like 50 pounds overweight. i could survive for months without food easily. i'd just have to get the drop on my roommate and kill them before they kill me.

They actually say that there are 6 metres between each floor I'm the film so with a really long ladder it would be doable.
I pull it up of course. I am more than capable of lifting 143 lbs, even considering the awkward angles involved.
The bigger issue is the amount of noise that it would make. It would likely wake up the people in the cell we're trying to reach, who would presumably not be cooperative. Even if successful, it would likely alert the people in the cell above that one, who would then be on guard and stymie any attempts to climb up further.

The process of level attribution isn't random but done expressely by the prison staff so that you'll experience both levels where food is abundant and levels where you'd starve in order to get you through the whole social experiment thing.

Presumably it slows down before it gets to the top, otherwise they'd have to deal with a glass/dish explosion every day

That too. You're fucked if someone woke up and decided to push the ladder while you were climbing it. I'm not saying this technique isn't possible but you'd have to get extremely lucky to make it more than 3 levels without running into some kind of issues. Plus there is the issue of the lift coming back up at night. It happens at random times especially after people start dying and it starts skipping levels. It's totally unpredictable just like the people whom you'd be dealing with.

Sidenote: Any other interesting movies like this where a group of people have to work out a problem in order to escape with their lives? I've also seen The Cube, Exam, Circle, Coherence - all really interesting as well.
They didn't outright state it but I think there were some clear clues from the former administration lady that the whole thing was set up as a social experiment so it makes sense that the levels they put you in try to put maximum pressure on you.
