I don't think you're supposed to. The very fact that the technology is so light-years ahead of anything ever shown on TNG is a clear indication that Picard takes place in an alternate reality, not unlike Discovery.

To be fair, there is a floating magical interface in fighter jets called a heads up display.
No it's not also a holographic touch screen, but it does display quite a lot of information to the pilot in a transparent overlay of their view.
I'm not saying its not shit, but its clear they are trying to evoke more of a fighter jet styling with ships in this than the submarine combat feel of previous trek.

Holographic displays were in Deep Space Nine in the future that was shown in the episode Sisko kept on disappearing and reappearing.

Those HUDs they use require a glass medium to display on. It can be transparent glass but it's still not floating in mid-air.

Right, they were converting to Vulcan philosophy and therefore becoming Vulcans. There are no natural Romulan religions as the whole point of the Romulans were to avoid being dominated by religion, and took it to the extreme with rabid materialism and militarism.
In Chain of Command Picard states they were once a “spiritual people” before falling to hunger and the military took over.

What the pilot sees appears to be floating in air. Even more so with the HMD devices like the one in the F18.
I'm not sure how much information the pilot has overlayed in the F35 helmet but I'm guessing even more.
