In the books the White Walkers are beautiful serene creatures that are all completely uniform and hard to comprehend, they create wights to fuck with people for whatever reason.

In the show the White Walkers are just weirder looking zombies and they also create wights to fuck with people. They probably thought the audience would be too dumb to understand, or something, and just made all the white walkers look like zombies.

In the book the "Other" (White Walkers) are vaguely made out to be a commentary on how things that precede human civilization can come and hit hard, and when it does it won´t give a shit about casualities and how much sorrow it causes. So its kind of a vague jab at climate change and natural disaster with the scope of the "Long Night" that follows the Other.
Problem is halfway through the show, the writers realized that an implicit message would fly over audiences heads and leave them disatisfied from the build-up, as everything needs to be boiled down to black-and-white morality and the overall message must be utterable in a political slogan

The standard scenario used to be mostly focused on Westeros, but then the daughter of a top-level executive insisted on having her will and getting her own saviour-complex story line.
