I get that the punchline to the second joke is that the thing in the backseat was the mulch from the first joke, but how is it funny?

It's a type of joke that can be really funny if you tell it the right way. it also needs to be way more absurd than that.
The first time they told it to me I laughed my ass off. The first part was about a farmer losing his precious yellow sheep and killing his three sons one by one because they couldn't find it. The second part was a constant repetition of the adjective "skull-shaped" while telling about a group of pirates finding a treasure, so when they asked me what I think would be in the treasure chests I said "a skull?" and instead it was the yellow sheep.
I've repeated the joke to several people and it always made them laugh.

But it isn't. You would need to confirm that the time on the clock was correct or not, rendering it useless and pointless. So no, it's never right.

This show should have ended two seasons about. It spent the first three pushing the bar and telling a story but then the last two didnt do anything but continue instead of wrapping up.

Alot of characters fell apart with the "extra time" Todd being the worst offender. I cant even make it through the last season I get half way in and just, nothing changes, theres no sense we are heading for closure.

I liked it but I feel like at some points it was just depression-porn that wallowed in its own misery.
I think part of this is because it has to keep on going and continue with so many seasons so Bojack never makes any meaningful change.
This is especially evident in the last season where it seems like Bojack has finally improved only for them to make him go back to being an asshole in the 2nd half.
Except this is like the 6th time they had done that so its no longer interesting but just disappointing.
