I have "heard" that as well but I've yet to see any super substantiated information on the culinary qualities of human meat and its similarity to pork. I know "long pork" is a meme name given to human meat. I know we've had relatively recent starvation events that resulted in cannibilization and loads of anecdotals from there. Its just like... we don't have fuckin gordon ramsey out here describing the textural and taste differences between a this cut of human vs that cut of pork, or if it relates better to another type of meat that maybe starving peasants or sea-stranded dock workers probably haven't ever tried.

I think it's part of the utility/intelligence factor. Horses can be ridden and dogs can be trained to herd sheep, be guide dogs, sniff drugs etc. While other animals are only good for food or what they can produce to be used as food.
