This has happened to me as a cashier. I just say "jag kan inte tala svenska" and switch to English. That phrase is pretty much all I can speak in Swedish.

In Poland we have standard english ANSI layout, but with żółćęśąźń under AltGr
Depends on what layout you are using, but AltGr + ö/å/ä works for me.
Many keyboards have a (SE/FI/NO/DK) Layout, with the special letters all on the same key.
AltGr and then the desired key. For example AltGr and Ä to get Æ
