Hard question man. I have interacted with both Poles and Russians, but cannot judge whether we are more laid back just because we are south of them.Culturally it is West/East mixture. Sometimes it is a divide - pro West people tend to be better educated and earn more (unless they are earning from corruption schemes).

Best way to find out is to visit Bulgaria with some friends next year. Most foreigners visit Sofia but places like Plovdiv and Burgas are also full of foreigners in the summer. AirBNB should be fine.

I'd say we fit the southern stereotype about being louder and family oriented, but I don't think we take it easy.
We're quite gloomy and prefer to talk complain rather then being positive. We're quite distrustful of institutions and authorities, wherever they're from.
Being overly polite in Bulgaria invites suspicion and some crudeness shows closeness.
We have southern drinking culture in that we drink as we eat rather then eating and then drinking.
Food is typical for the region, you can view it as a mix of Turkish, Greek, Hungarian and Serbian food.
Hospitality is quite pedantic in Bulgaria and you're expected to bring out food and drinks for guests even if they don't intend to consume.
