last time i was in Pontevedra i went to a chinese restaurant and the food was really bad, it tasted like microwaved leftovers from a few days back, wich is probably what it was.
It's from a restaurant that says CHINESE FOOD on the front, staffed entirely by Chinese people, was ordered off a menu written in Chinese, and uses recipes created by Chinese immigrants.

It looks unique for me to see raw veggies in Chinese food, thought that wasn’t common. I thought Chinese usually cook veggies with heat. I once heard that old Chinese people would think salads are unhealthy because it’s “cold”.
Chinese people love cooking their veggies in oil. But some regional Chinese people at theirs raw. Which is arguably healthier.

I've personally never had pickled veggies. Maybe regional Chinese eat theirs, but it must be a small population since nobody I know eats pickled veggies. I tried kimchi and I found it revolting. Even sauerkraut I don't like. I think you have to grow up eating it to enjoy it. Or maybe it's just a personal preference.
different region eats differently, its not really universal when it comes to food, just like how different part of china speaks different dialect/languages. Most of the chinese foods in the U.S were introduced by the cantonese immigrants, so it kinda impacted north american's view on chinese cuisine or chinese related topics in general.
