In the North India, the best states for architecture would be Rajasthan and UP. Rajasthan has plenty of old castles and forts. Lots of temples there too. Jaipur is the best city to visit in the North. UP has lots of Islamic architecture since it was the seat of both turk and mughal power. The other states like Punjab, Haryana and Himachal Pradesh have pilgrimage places that are worth visiting.

Varanasi in UP. But Uttarkhand has the best pilgrimage places like Haridwar and Rishikesh.

In the South, pretty much every state has the best temple architecture since Islamic persecution was considerably less. The downside is they won't let foreigners enter the interior chambers of temples but you can still go inside to take a look around the rest of the temple.
