Yeah lots of countries there really don't use much in the way of spices or richness, or at least the ratio of carbs to non carbs is way off. Plus they barely eat vegetables which makes me personally feel a bit ill

I think most people see through the mystique of french food that you've carefully perpetuated as a culture. Of course you have some of the best cheese in the world etc etc and I would never say it's bad, but in terms of what normal people eat day to day, it's really very similar to the rest of western europe, and the world becoming more globalised has made this clearer
It's like if I opened an english restaurant in turkey but I only ever made and served gigantic full english breakfasts. Yeah it would be nice but theres more to it than that, and it would gove the impression that we only eat that, which would be untrue. Same thing with Turkish restaurants here and gigantic koftes

This is true historically but in the past 5 years or so, kebabs are becoming less popular and loads of kebab shops are turning into proper sit down restaurants with table service and more authentic Turkish food. They just all serve the same thing is all, which does your cuisine a disservice
