Something I never got about "The Simpsons" is why the show portrays Edna as being pathetic and undesirable. Am I alone in thinking this is BS? She's a foxy older lady who's witty, sarcastic, and intelligent. Her being depressed and world-wary are presented as some kind of deal-breaker even though she doesn't seem like a bad person beneath her abrasive demeanor. I can't speak for everyone but I wouldn't find any of that unappealing.
Who are some other characters like this (IE, supposedly unappealing but not really)? I'd say something similar of Patty and Selma. Putting aside their indifference towards presenting themselves well, they're just slightly chubbier versions of Marge.

Edna is seen as plain, not ugly. Her appearance and personality are appealing to me, but I can see why she would be unremarkable in universe. She doesn't dress with a notable or distinct style, her hairstyle is common, but as says, she cleans up well and can be sexy when she wants to.
To address your points about Patty and Selma, many of their implied flaws are hidden by the lack of detail in the art. In-Universe, they are likely wrinklier than they appear to the audience. We also don't know what Laramie High-Tars smell like IRL but I imagine they smell like Players or NEXT brand cigarettes (cheap, low grade tobacco). If Patty and Selma smoked a cigar a day instead of chain smoking cheap cigarettes, they would probably be less immediately off-putting. Patty and Selma are also notorious for poor grooming and being abrasive in their attitude.

Hollywood seems obsessed with girls being super skinny but a girl with some chub in the right places isn't a bad thing. A girl with the right amount of fat on her is comfy as fuck.

Moe and Edna aren't comparable because Edna is merely abrasive while Moe is a genuinely terrible person on top of having a horrible personality. His main faults are that he's a cruel, surly, and vaguely-psychotic misanthrope who's involved in lots of unsavory criminal activities. Appearance-wise he's not ugly or anything (he's just an average-looking middle-aged man) but people find him deeply unappealing because he's boorish, quick-to-anger, and bristling with hostility and barely-concealed contempt for everyone he meets. He's shown constantly forgetting Marge's name in the pre-zombie seasons, which suggests he has such little respect for her, Homer, and people in general that he doesn't even try to get her name right.

It's not that it isn't an obstacle, but my point was that his appearance isn't nearly as debilitating of a problem as his general rudeness and malevolence (which isn't a problem in the zombie episodes where he successfully strikes up relationships because his previous meanness has been gotten rid of).

I can't say why this is exactly, but I've always had a thing for Helen Lovejoy. Even though she's a shrill and annoying fundamentalist, I like to imagine she's incredibly sexually pent-up despite her constant self-righteous moralizing. I have a penchant for characters who are defined by some kind of paradox, which usually means someone who's outwardly principled but has secret vices (I like the Vestal from Darkest Dungeon for similar reasons). Helen REALLY seems like she'd be that deep down, where she's ashamed of her prurience and her raw carnal desires. I love the trope of despoiling something that's "pure" or "righteous." Moe is vulgar and a nasty person and even then he can still land women. He slept with his waitress Colette, got a girlfriend named Renee, and also dated Katy Perry. But in the case of Renee at least his shit behavior turned her off.
