Edgy has been a fairly common phrase for at least the last 10 to 15 years. We were using it to make fun 90s trends when I was in highschool. It's a real phrase used go dag on things to try to he cool, grim dark, or extremely violent for no reason or to try and come off as more mature than it is.. You know "edgy" shit.

Depends on how and when the term is used, but yes, "edgy" is more or less a buzzword when people think the writing or character tries to be "deeper, or darker" than it really is or should be.

"Edge" is when a material has a scene explicitly for the sake of appearing cool or shocking the viewer, or to serve as "clickbait" in a sense, attracting simpletons to the show simply because it "does things that others don't".
Like Sword Art Online's rape scenes, they don't add anything to the story, but you'll hear SAO's fans say "this anime is more mature than the others because it has rape!"
That's not to say that rape is inherently edgy, Goblin Slayer is an example of rape actually serving a function within the world itself, outside of existing to say "This character got raped! WHOOOOOOAAAAAA"

It definitely used to be more specific but as it came more mainstream it quickly was watered down to pretty much meaningless insult with a shallow theme. Mary Sue would be another good example of term ruined by popularity.
