The "Let's put on our mean faces" was all her. The "Let's use knives" bit was her imitating Mr. Burns with the fingers. She even said "Doorways" more oddly on her own.
Apparently Pom knows what little flairs to add to her character on her own without being told specifically what to do. It's also apparent that a lot of the other actors want to work more with her.
There's more mental syndromes than just autism, you know.
I'm going to disagree OP and say it's that Mantis doesn't quite understand that full meaning of death. During Youndu's funeral, she's smiling, and during Tony stark's funeral, she seems bored. For a character that grew up on Ego, who would constantly kill people for not getting him what he wanted, I think she has a warp perception of what death is and doesn't understand the ramifications. It also doesn't help that she died before the rest of the people on Titan so she probably still doesn't understand loss.

Out of the Guardians, Nebula and Rocket seem actually affected and sad, while the others are being solemn, but not personally affected, which makes sense.
So I recently stumbled upon a video from this pretty clickbaity channel, but it made an interesting point.
Unlike Eitri's Gauntlet, the Stark Gauntlet has a constant surge of energy when worn with all the Stones. But both times Carol and Tony grab it from Thanos hand, the surge stops. When Tony does it, it's obviously because he's taking the Stones with the nanotech, but when Carol does it, it's because her true power, aside from the photon blasts and such, is absorbing energy. She's basically absorbing the surge, which (at least in the guy's logic) is why she manages to dominate Thanos in that scene, until she's Power Punched out of the movie, that is. Might be a reach on that regard, but the energy surge thing is a nice detail I hadn't thought of.
Watch him become the next Iron Lad, would actually be a great Segway, Make Pepper the CEO head of Stark who hires him and makes him the next suit.

Nebula actually had a good time being stranded with Stark. He taught her how to “play” and be a good sport and to have fun in a way.

She absolutely knows what death is. She warned the Guardians about what Ego did to his kids. She didn't know Yondu or Tony well, is all. She presumably got to know some of the kids and was horrified at what happened to them.
