I like how the one Boomhauer's perspective episode implied that he's the only one with an intelligible accent and that everybody else has the ridiculous unintelligble Texas hillbilly accent.
You only really need to be able to pick out keywords.
So for example, if Boomhauer wants to say "The meat is grilled perfectly" he'll probably say something along the lines of
>Hey Hank so that dang ol' STEAK is like I say uhh GRILLED dang ol' PERFECTLY and you know how to work the dang ol' barbeque so fine yeah.
Emphasis mine.
You don't actually need to stress out over understanding every single little bit of his speech. That's the joke.
