Other characters struggle. Saitama is the "I just win" button for his series. He's not supposed to be the hero with the complex physical trials, he's a character that started as a gag but eventually evolved into someone you watch for the more civilian complexities and to see how people bounce off of him.

Reality manipulation wouldn't work on him because he's too powerful (eg. when tatsumaki lifts him, he becomes heavier once he starts concentrating on resisting her telekinesis)
He could overcome probability manipulation physically - he can scale his speed and though processing infinitely, to the point that the world is frozen around him.
He would be immune to any bacteria/virus because his cells themselves are so strong
