Because unfortunately, edgy "adult animation" that relentlessly apes whatever's currently in-vogue (in this case, Game of Thrones and Berserk) would likely have far more appeal with mass audiences than a hypothetical Castlevania show that keeps things faithful to the original IP.

The series is overall about the consequences of Dracula and the neverending resurrection of him whether by humans or a natural need of the world for him. Not jumping straight to a different era and sticking around in this one for a while is fantastic for portraying the never ending cycle of suffering revolving around big D
