Can someone tell me why stuff like Garnet's third eye or her being a fusion were "secrets" being kept from Steven? There's no real reason why Garnet would hide this information. It's like if the gems hid the fact that they have weapons or can shapeshift from Steven instead of just him knowing they can do it day one.

In the episode where Steven is a baby and the gems kidnap him Garnet unfuses and it makes Steven cry. Perhaps they wanted to wait until he was older and could understand fusion to tell him Garnet was a fusion.
when Pearl was poofed by her own holoprojection, Steven freaked out because he thought she was dead. Before that its reasonable to assume he didn't fully grasp the concept of gem physiology - they were just his magic moms with magic rocks embedded in their bodies.
I think the CGs retired Fusion as a passtime after Rose died/gave birth to Steven. They decided to only use it for deadly situations
Maybe because of how they saw Rose giving up her entire self to create Steven, and the parallels to fusion and losing your self in a relationship
They thought it might give him unusual fetishes.

The first part's fine on the first read: Ruby and Sapphire are pained to be apart. They're more Garnet than they are themselves alone, and they don't need to justify it.
But then they tried to explain it more than that because he's the POV character and someone asked the same question you did.
So they went with the Broly scenario: it made him cry as a baby so it now decides someone's life. In my humble opinion the worst anime homage in the show.
That doesn't explain at all why they felt the need to keep it a secret in the first place.

he did not know Ruby and Sapphire existed his "entire" life, they make it seem like this wedding was something Steven had been waiting for and preparing for for a very long time when he only met them a year ago if that. it'd make more sense if it was him planning for Lars and Sadie's marriage.

Because Garnet was originally an actual person then writers came up with the concept of fusion. Then they decided itd be a cool twist.

It's not a contradiction, it was both love at first sight but also that didn't make it a good or meaningful love until they grew together on Earth.

garnet probably never saw the need to, it's not like steven gained anything by knowing they were a fusion and it's not like they ever really unfused for any reason.
Gotta have some secrets.
And then Steven understood it in Giant Woman. Why not show then? Why wait until his birthday?
