It's obvious they were trying to recreate Zutara wit him and Korra. But they somehow made it less appealing than a relationship between two characters that barely interacted.
I thought it was a servicable main pairing, at least in season 1. frankly asami's presence ruined a lot of character interactions.
It was honestly best when they just dropped the romance stuff.
I think the problem was that they tried to develop what would have been two seasons worth of a romance subplot over the course of what would otherwise be, like, half of a season. They crammed too much into too little, and as a result it all felt rushed and contrived.
It's why people ended up giving praise to the development of Korra and Asami's relationship across Seasons Three and Four; they had more room to pace it out up until the finale. Then again, they still had to explain afterwards that they were a couple. In retrospect, I think the way that the held hands didn't help. Their fingers should have been intertwined.

I recall people just sort of going "phew, glad that's finally over" when korra and mako kissed in the last ep. It's season 2 that made everyone go feral because the love triangle was brought back again.

Not really. Tumblr was at its peak then and people took "girl power!!" into overdrive, while somehow simultaneously hating Korra (Korra hate peaked in season 2). Asami has always been nothing but a plank of wood, but people projected onto her hard, thinking it was somehow subversive to root for a traditionally feminine female character against the brown tomboy. They even started insisting that she should be the avatar and shit.
Korra and Asami had the opposite problem. While Korra and Mako was too forced and shoved in our face, I legitimately didn't realize Korra and Asami were a thing and them getting together at the end seemed to come out of no where.
Mako fell head over heels for this?
Bolin clearly had better taste out of the two.

He just accepted Korra wasn't really into. It was a dick move by Mako, but not really something that would break up brothers.
asami is one of the most terribly designed cartoon characters i've ever seen. it could not be more obvious their intention when they designed her and it could not have failed more miserably.

It was literally played off as humorous in that very scene.
It also completely fucked with Mako's characterization from an ep ago.
When the brothers are first introduced, Mako is portrayed as all-business. He doesn't give a shit about girls. He focuses on getting the job done, because it's the only way to get food on their plates. He's on perma-survival mode, because he had to raise his little bro.
Bolin is the player. Bolin is established as always bringing girls to their locker room (which he does with Korra). Mako even scolds him over it because apparently he does it all the time.
This is all established in ep 2.
In ep 3, Mako finally warms up to Korra. Not because she's a girl, but because he realizes she wants to help him get his brother back. It's established that Mako only really cares about (again) getting the job done -- which in this case, is protecting Bolin. Mako, again, is still in survival mode.
The next ep just throws this previous characterization out of the window completely, all because Bryke had to have a love triangle. Out of nowhere, Mako falls for the first pretty girl he bumps into. So not only does this make him look extremely shallow, but it also makes him look like a hypocrite -- the older bro dissed his younger bro for always chasing tail, and then turns around and does it. Even worse when he realizes he wants to date Korra too just because Bolin asked her out.
Mako would've been so much more well-received if he had just kept the same personality he had in his first 2 episodes.
To be fair about Mako with Asami, subconsciously he probably justified it by the fact that he got to gold dig off her. Dating isn't that forbidden if it literally makes your poverty stricken life easier through your rich girlfriend sponsoring your team and giving you the good life.
