Humans just have never been designed well in Sonic games, even in unleashed. You could take the random humans from those games and the average gamer would not be able to identify them from the Sonic series like most art-styles would for other games. The humans in Unleashed don't look to different from the designs of any other shovel-ware games that came out at the time.

I disagree with you about sonic unleashed having bad design. Hashimoto said that humans have always been too realistic in past sonic games, so they tried to make them more cartoony and generic for unleashed to help them fit more with sonic. They concept artists said that they studied pixar movies for inspiration.
Sure, they are very broad looking and could be used for most games, but that's cause they wanted a universal appeal. So regardless if you hate them or not, you have to admit that they mix incredibly well and it never looks jarring seeing a talking blue hedgehog talk to them.
Also they cared about the npcs a lot. there's nearly a hundred uniquely modeled humans, all with unique names, back stories, dialogue, character progression, and some even have side missions.

They were never realistic. Maria and Gerald and Tower and Elise were all about as stylized as Eggman. The NPCs are more poorly designed than realistic. Concept art shows that they weren't supposed to be really realistic.
