It's not dependent on dominant species although dominant is would be a more likely sample in the omnitrix than a home dominant.
The species has to be somewhat sapient as experienced by lifeforms like humans, galvans, celestialsapiens, etc
Option two. If it's not sapient, the Omnitrix isn't going to save its DNA.
But to answer your first question, the watch can take multiple samples from the same planet, it doesn't necessarily have to be the "dominant" species. Astrodactyl and Humungousaur are from the same place.

Sentience & Sapience are different things, and since the Omnitrix requires a conscious, sapient user. All the aliens must be Sapient by default. Examples of Non-Sapient alien transformations can be found on the Nemetrix in Omniverse, a bootleg copy of the Omnitrix that lets the wearer transform in the Non-Sapient Predator Species to Bens Aliens.
At least he was improved on in Omniverse, just making him a giant gorilla with spider-like traits in AF & UA felt pretty lazy

It never turned Ben into little 10-year old equivalents of his aliens. The Omnitrix would be pretty useless otherwise, imagine if you were 30 and turned into an alien with a 20 year lifespan.
Retconning 2 series for the Original Series fetishism is not canon
Its said Kinecelerans (XLR8) supposedly only live for weeks, so yeah Ben would've died the first time he turned into XLR8 if Lifespans were a legit factor
AF retcon is thankfully not canon, and it even backtracked on its own retcon before the series was finished.

The Omnitrix DOES turn Ben into versions of his aliens that are the same age he is, though. The episode where he and Max get aged down proved this.

For example magic was a lot more mystical in OV. I don't know why that team had to emphasize on it when only AF was like that and in UA it was shown the more mystical elements of magic.
Also there's no more human alien hybrids which means humans no longer have the coolest superpower present in any fictional setting in UAF we can fuck good and we're relative versatile enough that there's a wide range of aliens we can have kids with.
