It's not dependent on dominant species although dominant is would be a more likely sample in the omnitrix than a home dominant.
The species has to be somewhat sapient as experienced by lifeforms like humans, galvans, celestialsapiens, etc

But to answer your first question, the watch can take multiple samples from the same planet, it doesn't necessarily have to be the "dominant" species. Astrodactyl and Humungousaur are from the same place.

any animal in cartoons that can speak already has human intelligence anyway lol (outside of that 1 episode of dexters lab), and yeah of course turning into earth creatures would be boring but you never know what situation Ben would be in when he would have to transform into coral or a hookworm with human intelligence.

Sentience & Sapience are different things, and since the Omnitrix requires a conscious, sapient user. All the aliens must be Sapient by default. Examples of Non-Sapient alien transformations can be found on the Nemetrix in Omniverse, a bootleg copy of the Omnitrix that lets the wearer transform in the Non-Sapient Predator Species to Bens Aliens.

For example magic was a lot more mystical in OV. I don't know why that team had to emphasize on it when only AF was like that and in UA it was shown the more mystical elements of magic.
Also there's no more human alien hybrids which means humans no longer have the coolest superpower present in any fictional setting in UAF we can fuck good and we're relative versatile enough that there's a wide range of aliens we can have kids with.
