Mable did a bunch of things wrong and usually it was Dipper having to sacrifice whatever he was working towards in order to make her happy again or fix the problem. It's what make him much more likable and endearing compared to his sister.
She did a lot of things wrong, it's just that the last one happened to be falling for an incredibly obvious trap that let the world be overtaken by a cosmic horror.

People always put The Time Traveler's Pig on the list of times Dipper sacrificed for Mabel, but it's total bullshit. Letting Mabel have Waddles wasn't Dipper making a sacrifice for Mabel that should rightfully be reciprocated. Mabel getting Waddles and Dipper messing up with Wendy was the natural order of things. The scenario in which Mabel loses Waddles so Dipper can impress Wendy only comes after extensive time-space continuum fuckery. Mabel was willing to sacrifice Waddles so that Dipper could impress Wendy. Mabel was willing to allow herself to be deprived of a beloved pet and and suffer a broken heart so that Dipper could look cool in front of his crush. That's fucking selfless. Dipper deciding to let things happen as they should was not a sacrifice. It was him realizing that it would be really shitty and selfish for him to allow Mabel to make a sacrifice. Even more so when you consider that Wendy was never ever gonna date Dipper anyway.

That's the thing though: Dipper was expected to be a man, was treated like one, and grew into one, This in turn makes him an infinitely better character than his sister who started ended the series pretty much exactly as she started while her brother matured as character.

If Mabel was a selfless and mature person, she wouldn't have spent a entire month guilt tripping his brother. She was aware that he could still manipulate time and reverse things, which was the entire intention behind the guilt trip.

Making it more realistic wouldn't have made it better. It was funnier. It was able to get the emotional point across while injecting some humor into it. And it's a more time and resource-efficient way of getting that emotional point across than showing Mabel going through life more bitter and happy.
