We're just at the Hannah-Barbara stage again, that's all. Companies are cheap and want cheap cartoons.
As technology increases though, and it gets cheaper to animate well, eventually it'll become more prominent - especially for those streaming sites that survive that bubble popping, since they don't have to rely on advertisers to fund the content.

We’re living in a TV golden age, lots of good things being made with high budgets in different genres for different audiences. Food is super tasty.
