The reason for that thin linen is much the same as the use of silk in other societies: it's bragging rights fabric. Everyone else would need something sturdy enough to last through years of life in a time when everything was done manually. To make thread that fine and weave it would take ages with the technology available at the time (hand spindles, not wheels). Even today spinning something thinner than your average lace is intimidating to a lot of people in the hobby, and a lot of modern handspinners either get their linen fibers preprocessed or won't do linen at all because of the extra labor to get it ready to spin compared to, say, wool and silk.
