I think its a lot more interesting in a story if a character manages to keep their humanity perfectly intact over the thousands of years they've been living than if they become a focused inhuman being who only cares about accomplishing a singular goal.
>minor/side villain long thought to be missing, dead, or just unmentioned for a while returns much stronger than before
bonus points if they're using a new secret identity or moniker, only for their former identity to be revealed in dramatic fashion
>large brute/brawler/bruiser 'dumb' character who's either portrayed as a gentle giant to the protagonists or a typical bumbling, oaf type underling to the villain happens to be extremely knowledgeable in some highly niche or esoteric aspect of higher education or refined living. e.g. The heavy from Team fortress 2 studied classic russian literature.
