Cat Fingers. It was the first time I thought, "hey, this show is pretty damn good."
Unfortunately, the total number of those times wound up being fewer than I'd hoped.
Season 1's drawing are so much more sexual and I miss that aspect of the show.
The ending would have been better if Steven shattered Jasper and couldn't cope with the regret and the gems weren't sure if they should forgive him, or if Jasper actually came with Steven on his adventure

You can tell they put their all into making this episode special. This was really our first major hint of Rose kind of being a piece of shit.
I dont understand why the show obssesed over those dumb rubies instead of developing lapis and jasper there were so many things that could've be done and were some of the most popular characters.
It really was something special. A shame Bismuth became a nothing character after the fact. I like her well enough, but she had so much more nuance that was kind of just forgotten.

Her redemption arc was fantastic because of her menace. Unfortunately the crew thought the comedic exaggerations of these characters were what we actually wanted to see. A damn shame. So many good characters gone.
Ruby also has the most annoying and poorly trained voice actor by far. The episode with Navy is one of the only ones I can't watch again because of how bad the acting is. It's like someone on NewGrounds trying to do an annoying voice.

It's kind of cheating since it's so recent, but the cooldown hug from the finale is actually up there for me. Not just the action, but the speeches that went along with it.
Most of my others have already been posted here, but Comet is definitely what made me a fan for life.
What was even the point of Room For Ruby? It's like a townie episode except it's not somehow.
Lapis development and for Navy to take revenge on Steven for leaving them in space. It also removes their mode of transport which forces Steven to give himself up in the season finale.
Why are tou getting upset over the rubies, it's the stupid worthless townies that are the problem, the show wasted 50% of it's time on them and killed all potential for any of the gem characters to be developed properly
Agreed, it was really disappointing seeing her character turned into basically "quirky XD" after all the progression she went through. I thought she was pretty good in In Dreams though
It was closer to 15% given there were no more than 5 townie episodes per season, and yes I'm counting a townie episodes as an episode that actively focuses on a townie not just one they appeared in. They were a non-issue in its 156 episode run. Hell, Future had ONE townie episode.

I really appreciate how Fragments paired so nicely with Guidance to explain why Jasper can never be truly redeemed: With the war over, when anyone can be whoever they want, all she wants to be is evil, and that's as incompatible with The Crystal Gems as they were with The Diamond Authority.
You either don't understand her character or don't understand what evil means
She was in the exact same position as Steven. She based her identity around being the best soldier and making up for failing pink/her shameful Earth origins, just like Steven based his identity around helping people and saving the Earth, when era 3 came around they both lost their idenitities because they no longer had a purpose and they both feel lost and worthless because of it. She doesn't want to be "evil", all she wants is to be needed and have someone to devote herself to, that's why she devotes herself to Steven as soon as he earns her respect.
Mirror/Ocean Gem is where I fell in love, and it's one of the few episodes I rewatch time to time (others also being from season 1). I know most of the series is shit, but those special ones will always remain memorable.
