Honestly, this one. The art is amateurish but the overall story is really engaging and mostly unpredictable. An adult swim adaptation would fix the are issues and make some of the bloodier fights fun to watch.
I did a stroytime on /qa/ that took 2 or 3 months last year (1 chapter a day for a comic over 2,000 pages long) and I might do another sometime this or next year.

Hellboy by Genndy. Season one is the fun times with the BPRD and the finale is The Seed of Destruction/Wake The Devil hybrid. Season two is Hellboy blowing off BPRD and have A and B plotlines - A for HB and B for the BPRD crew. Season three is the Wild Hunt up to the death. Season four is HiH, the comeback and apocalypse.

Gorge Joestar is two separate stories that join together in the finale. The first one is about the life of Jonathon's son and his troubled childhood, which culminates in him fighting zombies in WW1, not vampires. It's actually pretty good, and I'd unironically recommend it (if you don't mind accepting that it's entirely fanfiction.)
The second story is about Jorge Joestar, the George Joestar of universe 37 (even though they later contradict this to wank him off in the finale.) His story is mostly about solving stand related crimes while the author thinks of more and more ridiculous things to happen around him, like Morioh growing legs and walking away, or the often memed 37 Kars on Mars. It has some good moments, like the Stand fight on Mars, but outside of that, is complete trash. Wouldn't recommend.
