Out of those I’d choose Mace because Vaapad is literally the only one that hard counters Sheev by literally throwing the Dark Side back in his face. Sheev cut down the other Jedi masters like paper mach and he doesn’t even think highly of lightsabers, he just trains to be good at them to mock the Jedi with.
Count Dooku because fencing is cool and he probably wouldn’t mind if I had fun like a normal-ish person on the side so long as I was diligent in my training. Also fuck trying to duel Sheev, I’m just gonna hypnotize myself/program a droid to shoot the old man with a Verpine Shattergun or some other slugthrower instead so he can’t even detect the hostility.

Dooku died like a bitch but at least Christopher Lee will last forever. He was one of the best Sith because he treated "Darth Tyrannus" like a formality and stuck with Dooku. Now that I think of it, the prequels had a lot of big names with special donut steel stuff like Samuel L. Jackson demanding a special purple lightsaber.

In the prequels they remark regarding the idea of a Sith chasing Queen Amidala that "the Sith died out centuries ago". But then they also remark later that Darth Maul was only the apprentice and thus there must be a master. I don't know if Rule of Two was official there yet.

He got his head cut off by Anakin in the moment which cemented him as beyond salvation. That's not "like a bitch" at all, it was a pivotal point in the entire saga. Had Anakin spared Dooku, Sheev would have killed Anakin instead and the whole thing would have gone massively differently. And Dooku put up a spectacular fight despite being far older and less strong in the force than Anakin, the chosen one.
Well if the Sith died out centuries ago, then that makes enough sense that there would be legends about them.

Let's pretend the rule was canon in episode 4 - what was Vader's take on Sidious trying to turn Luke to the dark side? Was he aware of his bullshit and knew that Sidious would try to kill him if Luke was stronger, or was he just rolling with it and thought he might keep both of them?
Vader was probably just tired and done with all this. It's obvious he was trying to turn Luke to the dark side in Empire to kill the Palpy but after that failure Vader probably felt there was no getting out of Palpatine's Shadow and was hoping Luke would just provide him the sweet release of death by Jedi.

The Rule of Two was specifically for the Sith Order to survive intact through the long years of Jedi dominance. It really wasn't needed anymore after Order 66.

Do you really think Palpatine would let an alliance of two of the strongest force users alive form right next to him? Sith have always been traitorous shitheads to the point that the constant infighting is what got them defeated in Darth Bane’s time in the first place. The Rule of Two was designed to counter this by making sure there was only one agenda to follow, the Master’s, and one person the betrayal would come from, Apprentice to Master and vice versa, with the goal of refining and strengthening the Sith since the Apprentice would only be able to kill the Master if they were strong enough.

He wasn’t, he was using Form IV/Ataru which is known for using the force to augment a person’s physical abilities so that they can attack even more aggressively; Djem So is all about blocks and parties which he needed to use since his injuries really fucked up his agility/force strength.
