RWBY is a show without a plot or story.
It has a setting, but the story isn't about the setting because it doesn't explore it in any depth. A story about a setting would be more like Samurai Jack or Jojo's bizarre adventure with episodic storytelling.
It has characters, but it isn't about the characters because they don't really change, just react to things that happen around them. A story about its characters would be more like Avatar or the Dragon Prince with characters encountering problems and learning how to adapt to survive the ensuing conflict.
It has no overarching story because the characters don't have any sort of objective in mind, they just show up and stomp whoever the bad guy is at the time. There is no Campbellian mono-myth. There is no objective, there is no adventure. Just a bad guy and some Macguffins.
And people eat this shit up because it has cute girls in skirts and tights
