The courses are too tight to really be full-time fun for me. NFS Most Wanted 2005 did a better job for pure racing experience.
normandie is such a comfy track
Wreckfest is unironically a great game for just normal racing since the game engine actually handles light contact way better than most sim racers. You don't get weird spinouts and physics glitches from just light taps or leaning.

Old NFS games are pure soul
That track sucked. It was nice to have a "highway only" race, but fuck me it got super fucking boring. Doesn't help that the Ai in NFSU2 is not very challenging and since you are unlikely to crash on that track ever, you spend the entire race in first place.
A god awful one, but still the best in the game.
