You just make the fundamental mistake to play with the wrong weapon, also you didnt pay enough attention to the game mechanics.
Equip axe, spamm r2 button and use diagonal forward dash instead of side and front/back dashing.
Enemy indicates a move--Diagonal forward dash---attack.

Locking on is okay for the most part, vs some bosses it's just straight up bad because your camera will freak out if you get under them
Some bosses can be staggered and parried with your weapon while others can't

Even with the framerate "problem", the game is very good and very enjoyable. You may say the framerate might fuckup the combat but it is "slow" and technical enough to no blame performance for a bad choice you made during a battle.

Im mainly a PC player and got a PS4 in November last year, and got Bloodborne some days a ago and i am really having a blast. It feels like going back home, to an experience similar the first day i played DS1

I have a PC and came from playing Sekiro to Bloodborne and couldn't stand the 30fps being jank and with ill pacing.

True, this game has some high emphasis on iframes. When used right it its a very powerfull tool.

The only bosses i can think of that can poison you are Shadows and Blood starved beast but the levels you find these bosses in already establish that these are areas with lots of poison so you would already have antidotes equipped
